"The Evergreen Cafe is a 99% vegan restaurant (they have one dish called the Mushroom Stem Soup that has egg). Also, they use all organic fair trade vegan sugar. Often times I go to vegan or vegetarian places and have to worry that one dish or another has refined sugar, I'm glad that Evergreen has gone the extra mile. They have a few popular curry dishes as well as the crowd pleaser dishes like Not Chicken Nuggets. Recently they added a "shrimp" dish that tasted so real I was hesitant to order it again. I recommend their #9 which is a curry dish with potatoes, carrots, and soybean. This is the restaurant's most asked-for dish. This is a fully stocked vegan Chinese food restaurant which has something for everyone. Don't be shy about substitution, they accomodate almost anything you can modify on a dish, within reason. Don't like soybean substitute tofu, etc. I also recommend if you have never tried it the Red Bean Bouw is an appetizer that will amaze you. Mrs. Tu, the woman who runs the restaurant, is a very wonderful woman. Often times she takes a moment to sit down with you and chat about life. She is never shy in telling her story of how veganism saved her husband's life. Enjoy!"
